Strained with an Italian tomato juicer, for just the right chunkiness. Blended with small amounts of fine apple cider vinegar. The balance is key. Not too hot. Just enough. A bit of tangyness from the aging. Delicate funk. Umami. Just the right amount of acidity in a friendly battle with the saltiness...
